Assessing Current Practices and Testing for E. coli O157:H7 in Beef Production: The Case of Beef Trim and Ground Beef

We have examined current measures to insure quality of beef production. Although a decrease in E. coli O157:H7 has occurred, additional measures can be taken to improve beef production.
